Vietnamese Beef Noodle Soup (a.k.a. Pho Bo)

About 2 days ago, we had some Vietnamese Beef Soup Noodles. We usually have this once a month and it was about time. Its quite simple to make actually; it just takes time.

Usually we have raw beef and beef balls to go with the noodles. Its probably the best combination. Anyway, here is the recipe I (Joe) use:

Soup:

  • 1 large pot of Water
  • 1/2 kg Beef Bones
  • 2-3 Ox Tails
  • 1/2 inch Ginger (Smashed and Charred)
  • 1 Onion (Roughly cut and Charred)
  • 1 Spring Onion (Roughly Cut)
  • 3 cloves Garlic
  • 2 tsp Coriander Seeds
  • 1 tsp Fennel Seeds
  • 1 Cinnamon Quill
  • 2 tsp Cloves
  • 1 tsp Black Pepper
  • 1 Star Anise
  • Fish Sauce
  • Sugar
  • Chilli Padi

To Serve:

  • Flat Rice Noodle (Pho)
  • Xtremely Thinly Sliced Raw Lean Beef (I used Topside this time)
  • Beef Balls
  • Thinly Sliced Onions
  • Finely Chopped Coriander
  • Basil Leaves
  • Cilantro Sprigs (Didn’t have it this time)
  • Spring Onions – Finely Chopped
  • Bean Sprouts (Didn’t have this time)
  • Thinly Sliced Chilli Padi

The soup takes longest to boil, normally around 3 hours. With the beef bones, you need to boil them once first (and throw the water away) to remove the impurities before adding the bones to the actual soup.  Smash and burn the ginger and onions first (grill or on the stove) then add them to the soup. Throw the rest of the ingredients (except sugar and fish sauce) into the broth and boil for 3 hours over low fire, reducing the broth by half. You can use more spices if you like, it all depends on your taste. You can add the beef balls into the broth too. Finally, add the fish sauce and sugar until you get the right taste.

Cook the Rice Sticks in Boiling water (usually 1-2 mins only) and place into the bowl along with bean sprouts. Lay the raw beef over your noodles and pour the boiling broth over it to cook it. Finally add whatever serving ingredients you like (all of them if you want) and EAT!

Don’t forget that you can keep any of the remaining Beef Stock in the Freezer for next time~! Enjoy.

Today, Joe woke up and craving for pancakes! So he looked it up at the internet for pancake recipes.

This recipe can make up to 10 pancakes depends on the sizes.

I help him mix the batter and we were ready to cook!

Pour the batter using the scoop for a consistence size.

Weird day

It was a weird day for me today.
Things were not going my way. Probably it's just me.

In the afternoon, I knew I wanted Japanese Sushi for my lunch but I ended up with Beef and black bean with fried rice.

My manager wanted to move the new desk for me. He open the drawer and spotted this.


We saw some White-I-don't-know-wtf-insects in the drawer!
Is it white ants? Termites? I don't know what it is.. I'm not using this drawer! 0_0

After work, I wanted to shop for myself but ended up buying winter clothing for Joe.

After shopping, thought I will have roti canai (ready made) for dinner but when I got home, I saw a splat of curry on top of the stove with pieces of broken glasses. Apparently Joe heat up the curry with the "pyrex" bowl on the stove, and it burst! Well, I guess it's a fake pyrex then.
No more Roti canai.

Supposed to go to Movie by Burswood to watch Rachel's getting married under the moonlight. But maybe because we had to clean up the mess, and we don't feel like going anymore, we end up having Japanese food for dinner with Donald at Momiji.

When we were ordering, In my heart, I wanted Okonomiyaki, but I ordered Chicken Udon instead.

What an interesting day for me hey. It might sound abit sad, but I didn't! That's why I feel weird.

Lunch @ Catalano's and Icey Ice

My workmates and I went to Catalano's to have italian food.
None of us had been there before, the service was good and the food was really yummy!



I had the Veal Scaloppini with mustrooms and marsala creamy white sauce



Christine had Alla Vodka gnocchi



Judy had Fish of the day - Barramundi



Brooke, my favourite of all my workmates, had Arrabiata Penne

We were so full after that. We took a nice slow short walk to my car then we headed to icey ice since Brooke and Christine haven't tried it before. The owner was very nice to them because they were first time customers, he even gave them some free-bees!



Brooke had a massive oreo ice. It's bigger than her face. haha She felt very sick afterwards but couldn't stop eating it. If she's not careful she'll turn into the size of a house!!!



Christine had Mango Ice after a loooonnnggg decision making.
Probably 10mins :P But it was worth the wait.



I had the Green Tea Ice with reb bean.
My workmates think this looks like wet cabbage and they don't really like it, especially with the red beans. Probably they are not used to it. But I think its nice! hehe



Then the boss gave us watermelon & strawberry Ice on the house!
I was so surprised that he did that! I never get those for free even though I've been there so many times! I must drag my workmates along wherever I go next time!

The worst production ever

Joe and I went to watch Kung fu Chef yesterday.
I am all excited and can't wait to watch a Cantonese movie in Perth!
I was thinking to myself, how rare it is to have chinese movie play in cinema here, so i must watch it on the 1st day it started showing.


After watching it, I was so dissapointed. The movie is so poorly done.

It's not funny at all! I paid freaking 12bucks to watch this movie.

Lunch @ Cori Anna, William St, Northbridge

Donald, Joe's new house mate from Korea. He is a very nice & funny guy.
He brought us to Cori Anna last Wednesday for Korean food. He said Cori Anna is one of the best Korean food in Perth.

Cori Anna used to be very quiet and food they served were not very good until they sold it off to the new owner end of last year.





I've been really "Korean" lately. Eating Kim Chi at least once a week (even at home), watching Korean Drama, started learning Korean language from Donald, catching up with Korean friends. I should just born in Korea hey. :P

Korea is such a fascinating country. Thanks for Elly & her family, especially her sister, she brought me around Incheon and experience the lifestyle of Korean. Thanks to Elly too, she is willing to bring me around eventhough she is so stress at work and rush home for me. I wish to go there once again to meet Elly and her family to show appreciation and explore more about Korea. I'm still feeling regretful from not able to spend the last day with Elly's family for a Family Dinner. I will definitely going back there again, sometime. Wait for me Korea.

Went to Hong Kong BBQ restaurant last Friday night with frens to have dinner.
It's quite a small restaurant located few shops away from Hit studio.
We were all very hungry and we have to stop ourselves from ordering too much as everything taste good by just looking at the menu.

$900 Tax Bonus! Relief is on it's way from 6 April

Taxpayers earning less than $100,000 will start receiving a cash bonus from April 6 as part of the federal government's $42 billion stimulus package.

But they have only until Sunday to make sure the payment is made to the right bank account or posted to the right address.

The Australian Tax Office will make payments of up to $900 directly to bank accounts or postal addresses appearing on last year's tax return.

OH MY F-ING GOWDDD!!



WHAT THE HELL ARE THEY THINKING???

My Birthday lasted for 1 week

I was having lunch with Eileen today and I told her I had the longest birthday in my life!
Started on Saturday last week with a group of friends for a nice dinner and cake cutting.

Monday, I had a early birthday dinner at Alure with Frances and Joe.

Tuesday was my actual birthday. At work but fun. I bought cakes for my colleagues and they loved it. They bought me chocs and I received birthday cards from them too.

Wednesday in Japanese class, somehow sensei thought it was my birthday on wednesday, she wished me. I don't mind haha..

Thursday, Eileen sms me at 12.51am and wish me happy birthday because she thought it was still February. I'm not surprised at all. But I'm glad that she remembered. haha That's Eileen. +_+

Friday at work, Christine gave me TimTam Black Forest (damn good) and a birthday card. Judy gave me a deck of Tarot cards. She knew I'm into these things but I'm not good at it, but I will practice more :P and she gave me a birthday card too. (She actually left it near my table on Tuesday and i didn't realised until Friday. I can't believe it!!! How Blind am I?

Saturday, today.. the instructor wished me Happy Birthday while I'm on my way out.
Eileen handed me my Myer's $10 Birthday Voucher.
How good was that huh! 1 week of birthday. Unfortunately, Eileen's birthday was better than mine. She had her birthday party Saturday and got drunk. DRUNK. drunk. DRUNK. drunk until Friday. You won, Eileen. Thumbs up.

Doraemon in da house!

My birthday present finally arrived!

It's Doraemon Comic Book!
Don't laugh! This is my sleeping "pill" when I couldn't sleep at night.
When I was in KL, I'm always finding myself going to bed really really late like 3am or 4am which is really bad for me. (I always go to bed at 12am in Perth)
To make me feel sleepy straight away, I have to read something.
I can't read novels, as I will not stop if it is interesting.
I don't want to read newspaper, because it makes my finger black.
I can't read cook books, it makes me hungry.
I can't read complicated-meaning books, it makes me frustrated.
So, I read Doraemon. Easy, funny, and relaxing :)

I found Doraemon comic book in my sister's room. Wonder why she reads doraemon..... hmmm...?
Anyway, Thank you Je for the comic books~ really HAPPY when I got it! I woke up at 7.30am to open the present heheheeh.. delivery man works early in the morning! I will use it for my pangsai session too kakakakaka >.<

Automatic Checkout Teller - Stockland Woolsworth



While we were buying bread this afternoon at Stockland Woolworth's we encountered a new beast at the checkout - An automatic checkout machine. Extremely Complex with 20 different slots and outlets. Basically, the customer had to press start and scan their items on the machine, placing each item in a plastic bag before continuing to the next. The machine was very particular about the order. After that you had the option of paying via cash (even accepts 5cents coins... hehe), credit card or EFTPOS. It was a particularly fun. However, just to make sure we werent scamming Woolworth's, they had a checkout operator watching us all the while with eagle eyes. I suppose they've had people scan 1 item and then stuff 6 into the plastic bag.

They've had this machine for 8 months now but this is the first time we saw it... Pretty interesting but a bit slow if you're in a rush. I suppose its a viable alternative if the regular checkout lines are congested.

Birthday Breakfast

Joe was very sweet to me on my birthday. He knows that I had to work on my birthday, he tried his best to spend the morning with me with a nice yummy breakfast.
He was looking online, which place is nice for breakfast. Unfortunately, I had to go to work, so we can't go too far. So I decided on having breakky on Ba Ba Black in East Perth at the very last minute.



Ba Ba Black is a small cafe situated at the corner of Plain and Royal St.
People there were nice and friendly.
We had english breakfast tea.

and a super huge pancake.
This was the best pancake I ever tasted in my life. Trust me.
But I couldn't finish it. So sad.

After breakfast, I went to Miss Maud to get some cakes for my colleagues at work.
It's a tradition to buy cake for everyone on your birthday. I know it's weird, but I think it's quite nice. I love sharing nice things with people on my birthday haha :)
I bought Black Forest cake and they loved it.



Annette bought me Baci and a birthday card, and a new girl Racheal gave me ferrero rocher.
So nice of them.. I'm happy~

Thank you everyone that wished me on my birthday. Really happy.

Pre Birthday dinner @ Alure, Burswood

Joe booked a table at Alure in Burswood on my birthday.
I wore pretty dress that day... and it was sleeveless!

Anyway, let's talk about what we had that day.



This was on the house. Strawberries cubes in watermelon juice.
Not too bad, quite refreshing, it's just not chilled enough.

For our entrees, we ordered quite a few dishes and it was fantastic.



Sashimi platter & Beef Tataki.



We had those and felt we need more for entree, so I ordered one more.



Crab Cake. It was soooo yummy!! I never try this in my life! Very special.
Compliment to the one who created this dish.

As for our mains. we ordered 3 dishes to share.



Seafood Platter



Red Emporer



Pork with pomegranate gravy.
Not too sure about that mains.. Joe, Frances & I agreed that the mains were a bit dissapointing.
Seafood was fresh but taste abit bland. Pork was abit too tough but gravy was quite creative. Red Emporer was good, no comment on that.

We had dessert after that. I read some reviews on the internet about the desserts in Alure.
So I must try the dessert, no matter what.
We had the Torrone ice cream, toffee center, white chocolate crust



Valrhona chocolate fondant with iced double cream



It was beautifully decorated and it took about 20-25min to prepare the dessert as they make it on scratch. It was impressive and the taste of it was excellent.



I had to take a photo with it :P



Alure had won quite a few awards for the past few years.
Definitely going back there one day probably for the entree and dessert :P Yum.
